All of the meals served during the week have to include some sort of grain. I am a child care provider and am on the USDA food program which requires some sort of bread/pasta/rice at every meal if I am to be reimbursed for the meals I serve.
I also do not want to/have time to fix an entirely separate meal for myself and/or Cody.
Luckily I do have lots of gluten-free options already, and I've previously tried many recipes that use coconut and almond flour.
But after about three days of eating sauteed veggies with meat or salad with meat I needed some new options. Today the kids asked for enchiladas. I had in the freezer a smoked chicken breast (my husband makes large quantities of meat on the BBQ for me to freeze for quick meals) So I made them enchiladas in corn tortillas....oh, they looked good. The gooey cheese was calling my name. The slices of chicken I saved for myself were looking oh, so boring. So I make myself:
UN-CHILADAS
for one serving you need...
enough chicken to make yourself a meal (I used about 1/3 of a chicken breast) I sliced mine, but chopped or shredded would work equally well.
a couple of thin slices of cheese
Lay cheese over chicken. Melt in microwave or under broiler.
Top with several spoons of your favorite salsa.
And sour cream.
Avocado would have been tasty as well, but the kids had eaten it all and I didn't feel like cutting up another one.
Verdict: Very Tasty. I actually liked it better than enchiladas. Did not miss the tortilla at all. Thinking next time I'll layer all the chicken and cheese in a casserole dish, top with a container of salsa. Put it in a 350* oven for 30 minutes or so and serve it to everyone.
Would be equally good with beef. Or pork. Or with some diced green chili's or bell peppers.
Easy to pack for a work lunch for my husband.
